Delicious Spanish almond meatballs - a flavor-packed party hit!
Ingredients:
  • 500g veal mince
  • 1 egg, lightly beaten
  • 125.00 ml fresh breadcrumbs
  • 1 small red onion, grated
  • 10.00 gm mild paprika
  • 125.00 ml blanched almonds, toasted, chopped
  • 36.40 gm olive oil
  • 1/2 tsp saffron threads
  • 20.00 gm boiling water
  • 123.75 gm aioli
Instructions:
  • In a bowl, mix together mince, egg, breadcrumbs, onion, garlic, paprika, and almonds. Season with salt and pepper, then combine well. Shape mixture into small balls using level tablespoons. Arrange them on a plate.
  • In a large frying pan over medium-high heat, sear meatballs in oil until golden brown and cooked through, about 5 to 7 minutes.
  • While waiting, prepare the saffron aioli by placing the saffron in a bowl and pouring 1 tablespoon of boiling water over it. Let it sit for 5 minutes, then mix in the aioli until well combined. Serve the meatballs with the saffron aioli.
