Almond-Tres Leches Muffins

Indulge in almond tres leches muffins - a delicious twist on the classic Spanish dessert, packed with moistness and a delightful crunch.
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 2/3 cup sugar
  • 1/2 teaspoon almond extract
  • 2 eggs
  • 2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup (from 14-oz can) sweetened condensed milk (not evaporated)
  • 1/3 cup whipping cream
  • 1/3 cup milk
  • 3/4 cup sliced almonds
  • Additional sweetened condensed milk (1/4 cup)
Instructions:
  • Preheat your oven to 400°F and prepare a 12-cup muffin tin by greasing with shortening or lining with paper baking cups.
  • In a large bowl, cream together butter and sugar using an electric mixer until smooth, then mix in almond extract and eggs. Using a spoon, gently combine flour, baking powder, condensed milk, whipping cream, milk, and 1/2 cup of almonds until just moistened. Fill muffin cups 3/4 full with batter and sprinkle the remaining 1/4 cup of almonds over the top before baking.
  • Bake until light golden brown, then transfer muffins to a cooling rack. Let cool for 10 minutes and drizzle 1 teaspoon sweetened condensed milk over each muffin. Serve warm.
