Quick and delicious dessert made with canned sweetened condensed milk, evaporated milk, and cherries for an effortless treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 5 large eggs
  • 0.5 teaspoon almond extract
  • 1 (14.5 ounce) can pitted cherries in syrup, thoroughly drained
  • 0.25 cup heavy cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1.5 cups heavy cream, chilled
  • 4 tablespoons powdered sugar
  • 0.25 teaspoon almond extract
  • 0.25 cup chopped almonds, toasted
Instructions:
  • Preheat your oven to 350 degrees and generously grease and flour a 9- by 13-inch cake pan.
  • Combine the flour, baking powder, and salt in a large mixing bowl and whisk until well blended.
  • Using an electric mixer, whip the butter and sugar until pale yellow. Add eggs and almond extract. Gently blend in the dry ingredients until just combined. Carefully fold in drained cherries. Transfer the batter to the pan and spread evenly.
  • Bake the cake for 25 to 30 minutes until fully cooked. Allow it to cool slightly, then pierce the surface all over with a fork, focusing on the edges.
  • In a small bowl or pitcher, mix together the heavy cream, evaporated milk, and condensed milk. Pour the creamy mixture over the cake, letting it soak in and infuse with flavor.
  • Make the icing: Whip heavy cream until slightly fluffy, then mix in sugar and almond extract. Evenly spread over the soaked cake and finish by sprinkling with toasted almonds.
  • Chill in the refrigerator for a minimum of 2 hours or until you're ready to enjoy.
