Award-Winning Cherry Cheesecake Bars with a Sugar Cookie Crust - A delicious twist on classic cheesecake using sugar cookie mix and baked-in cherry filling.
Ingredients:
  • 1/4 cup cold butter or margarine
  • 4 oz (half of 8-oz package) cream cheese
  • 1/2 cup sliced almonds
  • 2 1/2 packages (8 oz each) cream cheese (20 oz), softened
  • 1/2 cup sugar
  • 1 teaspoon almond extract
  • 1 can (21 oz) cherry pie filling
Instructions:
  • Preheat oven to 350°F and generously grease a 13x9-inch pan. In a large bowl, combine cookie mix with butter and 4 oz cream cheese until crumbly using a pastry blender or fork. Set aside 1 1/2 cups of the mixture for topping. Press the rest of the mixture into the bottom of the pan and bake for 12 minutes.
  • In a large bowl, use an electric mixer on medium speed to beat 20 oz of cream cheese, sugar, flour, almond extract, and eggs until smooth.
  • Smooth cream cheese mixture on top of the slightly baked cookie base. Evenly distribute pie filling over the cream cheese layer. Sprinkle the reserved topping and almonds on top.
  • Bake until light golden brown, then cool for 30 minutes. Chill in the refrigerator for about 2 hours until cold. Cut into 6 rows by 4 rows to make bars and store covered in the refrigerator.
