Cherry-Streusel Muffins

Cherry muffins with almond streusel, a German treat ready in 45 minutes.
Ingredients:
  • 3 tablespoons packed brown sugar
  • 3 tablespoons all-purpose flour
  • 2 tablespoons finely chopped sliced almonds
  • 2 tablespoons firm butter or margarine
  • 1 jar (10 oz) maraschino cherries, drained, 1/4 cup juice reserved
  • 1 1/3 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 teaspoon almond extract
  • 2 eggs
  • 3 tablespoons sliced almonds
Instructions:
  • Preheat the oven to 400°F and line 12 regular-size muffin cups with paper baking cups.
  • Combine all topping ingredients in a medium bowl, except for the butter. Use a pastry blender or two knives to cut in the butter until the mixture becomes crumbly. Set aside.
  • Prepare the cherries by chopping them, then set them aside. In a large bowl, combine 1 1/3 cups of flour, granulated sugar, baking powder, and salt. In a small bowl, whisk together oil, 1/4 cup of cherry juice (reserved from earlier), almond extract, vanilla, and eggs until well blended. Gently mix the cherry juice mixture into the flour mixture until just combined. Add in the chopped cherries and almonds. Fill muffin cups equally with the batter, then sprinkle each muffin with about 1 tablespoon of topping.
  • Bake for 19 to 23 minutes or until a toothpick inserted in the center comes out clean. Then, remove from the pan and transfer to a wire rack. Enjoy warm if preferred.
