Indulge in Chef John's cherry pie with a crispy almond streusel.
Ingredients:
  • 1 1 (9 inch) unbaked pie crust (see footnote for recipe link)
  • 0.5 cup slivered almonds
  • 0.5 cup light brown sugar
  • 0.33333334326744 cup rolled oats
  • 0.33333334326744 cup all-purpose flour
  • 0.75 teaspoon salt
  • 6 tablespoons cold, unsalted butter, cut into pieces
  • 2 pounds cherries, pitted
  • 0.5 lemon, juiced
  • 0.33333334326744 cup white sugar, or more to taste
  • 0.25 cup cornstarch
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly line a baking sheet with a shimmering layer of aluminum foil.
  • Gently place the rolled-out pie crust into a 9-inch pie pan.
  • In a large bowl, mix together almonds, brown sugar, oats, flour, and salt. Use your fingers to blend the butter into the mixture until fully incorporated, making sure to break up any large pieces. Cover and refrigerate for 15 minutes.
  • Mix fresh cherries, zesty lemon juice, sweet white sugar, and cornstarch together until evenly coated and smooth, about 3 to 4 minutes.
  • Gently transfer cherries and their juices into the pie pan, press down lightly. Sprinkle oat mixture on top. Set the pan on the baking sheet.
  • Place in the preheated oven and bake until the cherries are bubbling and the crust and crumble topping are golden brown, approximately 1 hour and 15 minutes. Allow to cool fully before serving.
