Indulge in the delightful decadence of fresh cherry pie. Pit cherries, then mix with almond extract, vanilla extract, sugar, tapioca, and a dash of salt for a flavor explosion.
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 4 tablespoons quick-cooking tapioca
  • 0.125 teaspoon salt
  • 4 cups pitted cherries
  • 0.25 teaspoon almond extract
  • 0.5 teaspoon vanilla extract
  • 1.5 tablespoons butter
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C), while the tempting aroma of buttery dough fills the air. Gently nestle the bottom crust into the inviting pie pan, then tuck the top crust snugly under a cozy covering for now.
  • Combine tapioca, salt, sugar, cherries, and extracts in a large mixing bowl and let stand for 15 minutes. Pour mixture into the bottom crust, add butter on top, cover with the top crust, flute the edges, and make vents on the top. Place the pie on a foil-lined cookie sheet to catch any drips.
  • Bake in a preheated oven for 50 minutes until beautifully golden. Allow to cool for several hours before slicing into perfect portions.
