French cherry clafoutis: Fresh cherries baked in almond custard, dusted with powdered sugar.
Ingredients:
  • 2 cups of fresh sweet cherries, pitted
  • 2 tablespoons of blanched slivered almonds
  • 1/2 cup of sugar (can reduce to 1/4 cup)
  • 1 tablespoon of brown sugar
  • 1/2 cup of all-purpose flour
  • 1/8 teaspoon of salt
  • 1 cup of milk (2% or whole milk)
  • 3/4 teaspoon of almond extract (can sub 2 teaspoons of Amaretto)
  • 1 1/2 teaspoons of vanilla extract
  • Powdered sugar for dusting
Instructions:
  • Preheat the oven to a toasty 350°F.
  • Grease the baking dish with butter and a dusting of flour. Spread the cherries and slivered almonds on the bottom of the dish.
  • Create the batter by thoroughly whisking together eggs, granulated sugar, and brown sugar until blended. Add salt and flour, whisking until smooth. Incorporate milk, almond extract, and vanilla extract with a final whisk.
  • Pour the batter over the cherries and slivered almonds in the baking dish.
  • Bake at 350°F for 35 to 45 minutes or until golden brown and a toothpick inserted in the center comes out clean. If the top is browning too quickly, gently cover with foil halfway through baking.
  • Once baked, let it cool on a wire rack until it deflates slightly, which is normal.
