Ingredients:
  • ½ tablespoon unsalted butter (at room temperature) for greasing
  • 1 tablespoon sugar
  • 300 g cherries
  • icing sugar for dusting
  • 60 g plain flour
  • ½ teaspoon baking powder
  • 3 large free-range eggs
  • 60 g sugar
  • 300 ml milk
  • ½ teaspoon vanilla extract
Instructions:
  • 1. Preheat the oven to 180ºC/gas 4. 2. Blend all batter ingredients with a pinch of sea salt until smooth. Allow it to rest for 20 to 30 minutes. 3. Grease a 25cm round baking dish with softened butter and sprinkle with sugar. 4. Arrange cherries (pitted, if desired) in the dish and bake for 5 minutes to soften. 5. Pour the batter over the cherries until they are covered. 6. Bake for 30 to 35 minutes until puffy and golden. 7. Dust with icing sugar and serve warm.
