Polish Cherry Cake

Traditional Polish cherry cake: Moist yogurt cake with fresh sweet cherries, baked to golden perfection.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon butter
  • 2 cups pitted sweet cherries
  • 1 tablespoon white sugar
  • 0.5 cup olive oil
  • 1 (6 ounce) container plain yogurt
  • 1 tablespoon olive oil
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then whisk together 1 cup of sugar, flour, baking powder, and baking soda in a mixing bowl until perfectly blended.
  • Heat butter in a skillet on medium heat. Sauté pitted cherries in the butter until tender, sprinkling with 1 tablespoon of sugar, for 8 to 10 minutes. Remove from heat.
  • Create a hollow in the middle of the dry ingredients, and add 1/2 cup of olive oil, along with the eggs and yogurt. Gently mix until a soft dough forms. Transfer the batter into a 9x12-inch baking dish, then drizzle with 1 tablespoon of olive oil (optional) and sprinkle with cherries.
  • Bake in the preheated oven for about 40 minutes, or until the cake is set, golden on top, and a toothpick inserted into the center comes out clean.
