Elevate your Cherry Pie game with this unique twist! Cherry pie filling rolled in tortillas, soaked in a sweet syrup overnight, then baked to perfection with a crunchy almond topping. Perfect for any special occasion or gathering!
Ingredients:
  • 0.5 cup water
  • 0.5 cup butter
  • 0.5 cup white sugar
  • 5 (10 inch) flour tortillas
  • 1 (21 ounce) can cherry pie filling
  • 2 tablespoons white sugar
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon crushed sliced almonds
Instructions:
  • Prepare a 9x13 inch baking dish by greasing it. In a small saucepan, bring water, butter, and 1/2 cup of sugar to a boil. Spoon some cherry pie filling slightly off center onto each tortilla, roll them up, and place them seam side down in the baking dish. Pour the hot mixture over the 'enchiladas' to fully coat the tops. The mixture will be watery. Cover the dish and refrigerate overnight.
  • Preheat your oven to 375 degrees F (190 degrees C). Mix together 2 tablespoons of sugar, cinnamon, and almonds in a bowl; then sprinkle over the enchiladas.
  • Place in a preheated oven and bake for 35-40 minutes until the tortilla's edges turn a beautiful golden brown. Allow it to cool slightly before enjoying.
