Cherry Limeade Poke Cake

Indulge in a decadent layer cake using Betty Crocker™ Super Moist™ white cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1 1/4 cups lemon-lime soda
  • 1/3 cup vegetable oil
  • 3 egg whites
  • 1 tablespoon grated lime peel
  • 1 box (4-serving size) Jell-O™ cherry-flavored gelatin
  • 1 cup boiling water
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 1 teaspoon grated lime peel
  • Maraschino cherries, if desired
  • Lime peel twists, if desired
Instructions:
  • Preheat your oven to 350°F (or 325°F for dark or nonstick pan). Lightly spray the bottom of a 13x9-inch pan with baking spray that includes flour.
  • In a large bowl, use an electric mixer to blend cake mix, soda, oil, egg whites, and 1 tablespoon grated lime peel on low speed for 30 seconds and then on medium speed for 2 minutes. Remember to scrape the bowl occasionally. Transfer the mixture to the pan.
  • Follow the baking instructions on the box for a 13x9-inch pan and allow to cool for 20 minutes.
  • Stir gelatin into boiling water until completely dissolved, then poke holes in the cake with a fork or knife. Slowly pour cherry mixture over the cake to fill the holes. Allow to cool completely for about 1 hour.
  • Combine the frosting with 1 teaspoon of grated lime peel in a small bowl. Spread the mixture evenly over the cake, then garnish each serving with a cherry and a twist of lime. Store the cake loosely covered.
