Delicious almond cherry muffin topped with a sweet cherry glaze.
Ingredients:
  • 1/4 cup granulated sugar
  • 1/4 cup butter or margarine, melted
  • 1/2 cup milk
  • 1 egg
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chopped well-drained maraschino cherries
  • 1/4 cup chopped blanched almonds
  • 1/2 cup powdered sugar
  • 3 to 4 teaspoons maraschino cherry juice
Instructions:
  • Preheat oven to 400°F and prepare miniature (1 3/4x1-inch) muffin cups by greasing only the bottoms of 24 cups or 12 regular-size cups with shortening, cooking spray, or line with paper baking cups.
  • In a medium bowl, whisk together granulated sugar, butter, milk, and egg until smooth. Add flour, baking powder, and salt and mix until just combined. Gently fold in cherries and almonds. Fill muffin cups evenly with the batter (they will be full).
  • Bake until beautifully golden brown, about 10 to 15 minutes.
  • In a small bowl, whisk together glaze ingredients until smooth and pourable. Transfer muffins from pan to cooling rack and drizzle with glaze while still warm. Enjoy warm if preferred.
