Maraschino Cherry Nut Bread

Indulge in a luscious cherry pecan bread, perfect for a loaf or mini loaves.
Ingredients:
  • 1 cup white sugar
  • 0.25 cup solid vegetable shortening (such as Crisco®)
  • 2 eggs
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 (8 ounce) jar maraschino cherries, drained and juice reserved, divided
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease and flour a 9x5-inch loaf pan.
  • In a large bowl, mix together sugar, shortening, eggs, and salt until well combined using an electric mixer.
  • In a medium bowl, combine the flour and baking powder. Gradually mix the flour mixture into the shortening mixture in 2 or 3 batches, alternating with the maraschino cherry juice. Make sure to mix the batter thoroughly after each addition.
  • Dice cherries into quarters and combine with pecans in the batter. Transfer the mixture into the loaf pan.
  • Bake in the preheated oven at 350°F until a toothpick inserted in the center comes out clean, approximately one hour. Allow loaf to cool in the pan for 10 minutes, then gently loosen the edges with a knife and invert onto a wire rack to cool completely.
