Elevate chocolate cherry cookies with coconut and oats for a delicious twist.
Ingredients:
  • 1 cup butter-flavored shortening
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 0.75 cup drained, dried, and chopped maraschino cherries
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line baking sheets with parchment paper for easy cleanup.
  • Cream together shortening, white sugar, and brown sugar with an electric mixer until light and fluffy. Mix in eggs and vanilla extract until fully combined.
  • In a separate bowl, combine flour, baking powder, baking soda, and salt. Blend into the sugar mixture until a smooth dough forms. Gently fold in oats, coconut, cherries, and chocolate chips until evenly incorporated.
  • Place heaping tablespoons of dough onto the baking sheets.
  • Bake in the preheated oven for 8 to 10 minutes until the edges turn golden brown. Allow to rest for 5 minutes, then move to a wire rack to cool.
