Try this quick and delicious Spanish rice and shrimp dish for a flavorful spin on paella, perfect for a busy weeknight family dinner.
Ingredients:
  • 2 cups water
  • 1 (7 ounce) box Spanish yellow rice mix (such as Goya®)
  • 3 tablespoons olive oil, divided
  • 0.5 cup diced onion
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 tablespoon sweet and spicy seafood seasoning (such as McCormick®)
  • 0.5 cup fresh parsley, or to taste
Instructions:
  • In a saucepan, bring water to a boil. Stir in rice mix and 1 tablespoon of olive oil. Boil for 1 minute, then cover and simmer until water is absorbed, approximately 25 minutes.
  • In a hot skillet, saute onions in olive oil until just soft, around 2 minutes. Add shrimp, green bell pepper, red bell pepper, and seafood seasoning. Cook until shrimp turn bright pink, approximately 5 minutes, while stirring occasionally.
  • Scoop rice onto each plate, then add a serving of the pepper-shrimp mixture and a hearty sprinkle of parsley on top.
