Delicious shrimp fajitas with a twist on the classic recipe using taco seasoning. Pair with refried beans and Spanish rice for a tasty and simple meal!
Ingredients:
  • 1.5 tablespoons vegetable oil, divided
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 pound medium shrimp - peeled and deveined
  • 1 cup (1 small) chopped onion
  • 1 (1.25 ounce) package taco seasoning mix
  • 3 tablespoons water, or as needed
  • 6 (10 inch) flour tortillas, warmed
Instructions:
  • In a large skillet over medium-high heat, sizzle 1 tablespoon of oil. Toss in red and green bell peppers, and onion. Sauté, stirring occasionally until peppers are warmed through yet slightly crunchy, around 5 minutes. Take out of the skillet and keep to the side.
  • Drizzle the last 1/2 tablespoon of oil into the skillet and add the shrimp. Sauté until pink and opaque, then lower the heat and add back the peppers and onion. Mix in taco seasoning and water until everything is well coated. Allow it to simmer until the peppers are heated through. Serve in warm tortillas.
