Sheet pan shrimp fajitas: Shrimp, bell peppers, and jalapeños seasoned with olive oil and fajita seasoning for a quick and easy meal.
Ingredients:
  • 1 (1 ounce) package fajita seasoning
  • 1.5 pounds raw shrimp, peeled and deveined
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 red onion, sliced into strips
  • 1 jalapeno pepper, sliced into rings
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Combine the fajita seasoning and olive oil in a large bowl, then toss in the shrimp until fully coated.
  • Arrange the seasoned shrimp in one even layer on a baking sheet. Combine with bell peppers, red onion, and jalapeño, ensuring an even spread.
  • Roast the shrimp in the preheated oven until they turn opaque, for about 8 to 10 minutes. Then, transfer them to a serving plate.
  • Broil the pepper mixture until lightly charred, for about 2 to 3 minutes, then transfer it to the serving plate with the shrimp.
