Sheet pan baked fajitas - seasoned shrimp and veggies, served with warm tortillas. Perfect for a quick and delicious weeknight meal.
Ingredients:
  • 1 cooking spray
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 teaspoon lemon-pepper seasoning
  • 2 onions, cut into strips
  • 2 green bell peppers, cut into strips
  • 1 (1 ounce) package fajita seasoning
  • 8 flour tortillas
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a large sheet pan with cooking spray.
  • Combine shrimp and zesty lemon-pepper seasoning in a bowl.
  • Coat onions and bell pepper strips with olive oil and fajita seasoning in a large bowl. Spread shrimp on one side of the pan and vegetables on the other.
  • Roast in the oven until shrimp turn vibrant pink on the outside and the meat looks opaque, approximately 30 minutes.
  • Place the tortillas on a microwave-safe plate and cover them with a damp paper towel. Microwave for 45 seconds. Serve with shrimp fajitas.
