Delicious sheet pan meal with shrimp, sausage, corn, and veggies. Prep veggies while pre-boiling potatoes and corn.
Ingredients:
  • cooking spray
  • 1 pound baby Yukon Gold potatoes, quartered
  • 4 ears corn, husked
  • 4 tablespoons olive oil, divided
  • 3 tablespoons Creole seasoning
  • 1 lemon, juiced
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika, divided
  • 0.5 teaspoon red pepper flakes
  • 1 pinch salt and ground black pepper
  • 1 red bell pepper, cut into 2-inch pieces
  • 1 yellow bell pepper, cut into 2-inch pieces
  • 1 orange bell pepper, cut into 2-inch pieces
  • 1.5 cups cherry tomatoes, halved
  • 1 onion, cut into 2-inch pieces
  • 4 andouille sausages, sliced
  • 1 lemon, cut into wedges
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 0.5 teaspoon Creole seasoning
  • 2 tablespoons chopped fresh parsley, or to taste
  • finely chopped green onion, or to taste
Instructions:
  • First, collect all the ingredients needed. Then, preheat the oven to 425 degrees F (220 degrees C) and generously coat a large sheet pan with cooking spray.
  • In a large pot, submerge potatoes in salted water and bring to a boil; simmer gently until tender, about 10-12 minutes.
  • Boil corn for 5 more minutes, then drain and cut into thirds.
  • In a small bowl, whisk together 3 tablespoons olive oil, 3 tablespoons Creole seasoning, lemon juice, garlic, Italian seasoning, 1/2 teaspoon paprika, red pepper flakes, salt, and pepper until well blended. Set aside the flavorful seasoning mixture.
  • Toss together boiled potatoes, corn, bell peppers, cherry tomatoes, onion, and sausage slices in a large bowl. Stir in seasoning mixture until evenly coated.
  • Evenly spread the potato mixture in a single layer on a sheet pan and arrange the lemon wedges around the edges of the pan.
  • Place your creation into the warmth of the preheated oven for 8 minutes.
  • Combine shrimp with a flavorful mix of olive oil, paprika, and Creole seasoning in a bowl. Let the flavors meld and the shrimp marinate for a few minutes.
  • After 8 minutes of baking, introduce the shrimp to the sheet pan alongside the potato mixture and gently toss together.
  • Put the sheet pan back in the oven and bake until the shrimp turn opaque, about 6 to 8 minutes. Take out the lemon wedges and sprinkle with parsley and green onions for a flavorful finish.
