Quick and easy shrimp fettucine with pesto Alfredo sauce - rich and delicious!
Ingredients:
  • 1 (16 ounce) box dry fettuccine pasta
  • 0.5 cup butter, divided
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 (8 ounce) package cream cheese
  • 2 teaspoons garlic powder
  • 2 cups milk
  • 1 (8 ounce) package grated Parmesan cheese
  • 1 (3.5 ounce) jar prepared basil pesto
Instructions:
  • Fill a large pot with lightly salted water and bring it to a vigorous boil. Cook the fettucine until al dente, about 8 minutes.
  • In a deep skillet over medium heat, melt 1 tablespoon butter. Add shrimp and garlic, cooking and stirring until shrimp turn pink, about 2 to 3 minutes. Add the rest of the butter and allow it to melt. Stir in cream cheese and garlic powder until smooth, approximately 2 minutes. Proceed by adding milk and Parmesan cheese, stirring until the cheese is melted and the sauce is smooth, about 2 more minutes. Season with pepper as needed.
  • Gently incorporate the pesto into the creamy sauce. Then, drain the fettuccine and coat it evenly with the sauce.
