Spanish tortilla

Versatile Spanish tortilla: quick, easy, and customizable with any leftover ingredients. Hot or cold, it's a delicious way to use up veggies, cheese, peppers, or sausage. Get creative and try different combinations!
Ingredients:
  • 300 g waxy potatoes
  • 5 large free-range eggs
Instructions:
  • - Peel and thinly slice the potatoes, then pat them dry. - Peel and finely slice the onion. - Heat 2 tablespoons of oil in a small frying pan, add the onions and potatoes, cook on low heat for 25-30 minutes until golden. - Whisk eggs with salt and pepper in a bowl. - Add cooked onions and potatoes to the eggs. - Return mixture to the pan and cook on low heat for about 20 minutes until almost set. - Carefully flip the tortilla onto a plate, then slide it back into the pan to cook for another 5 minutes until golden. - Cut into wedges and serve with a green salad, hot or cold.
