Quick and tasty egg and potato breakfast or brunch dish.
Ingredients:
  • 0.25 cup olive oil
  • 2 potatoes, peeled
  • 4 slices bacon
  • 2 slices cooked ham, diced
  • 0.5 onion, thinly sliced
  • 0.5 red bell pepper, sliced
  • 4 eggs
  • 0.25 teaspoon Spanish seasoning
Instructions:
  • Trim the edges off the potatoes to form square shapes, then thinly slice them. In a medium skillet, heat olive oil over medium heat. Fry the potatoes until lightly golden. Remove from the skillet using a slotted spoon and set aside.
  • In a large, deep skillet, crisp up the bacon over medium-high heat until perfectly browned. Remove, crumble, and set aside. Keep 1 tablespoon of the bacon grease in the skillet, then sauté the ham, onion, and red pepper until tender. Remove from heat.
  • Combine eggs with fragrant Spanish seasoning. Transfer to a skillet with assorted vegetables. Top with crispy bacon and tender potatoes. Cook gently until the base caramelizes. Flip carefully to achieve a golden hue on both sides. Enjoy this savory omelet piping hot.
