Spanish tuna pasta bake

Whip up a family-friendly tuna pasta bake for a delicious and simple meal.
Ingredients:
  • 250g dried large pasta shells
  • 1 medium brown onion, halved, thinly sliced
  • 1 large red capsicum, thinly sliced
  • 2 x 400g cans chopped tomatoes
  • 125.00 ml pitted green olives, chopped
  • 2 x 185g cans tuna in oil, drained, flaked
  • 187.50 ml grated mozzarella cheese
  • 82.50 ml finely grated parmesan cheese
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced and lightly grease an 8 cup-capacity baking dish. Cook the pasta in boiling salted water according to package instructions until tender, then drain.
  • Heat oil in a large frying pan over medium heat. Add onion and capsicum, and cook for 5 minutes until onion has softened. Stir in garlic and cook for 1 minute until fragrant.
  • - Stir in the tomato and bring to a gentle boil. Simmer on medium heat for 10 minutes, or until the sauce has thickened. - Mix in the pasta, olives, and tuna. Combine well and season with pepper. - Transfer the mixture to a prepared dish and sprinkle with mozzarella and parmesan. - Bake for 12 to 15 minutes until the cheese is melted and golden. - Serve and enjoy!
