Elegant dish: White asparagus with smoked salmon and parsley oil, ideal for a romantic dinner for two.
Ingredients:
  • 10 ounces white asparagus
  • 1 tablespoon butter
  • 1 pinch white sugar
  • salt to taste
  • 4 ounces smoked salmon
  • 3 tablespoons corn oil
  • 1 tablespoon chopped fresh parsley
  • 1 ounce Parmesan cheese
  • coarsely ground black pepper to taste
Instructions:
  • Peel asparagus spears from top to bottom using a vegetable peeler, starting just below the tips. Trim off woody ends with a knife.
  • In a wide saucepan, nestle asparagus spears and cover with lightly salted water. Bring to a gentle boil, add butter, sugar, and salt. Simmer until asparagus is tender and easily pierced with a knife, about 15 to 25 minutes. Drain before serving.
  • Divide the luscious smoked salmon between 2 elegant serving plates, then artfully arrange the vibrant asparagus spears on top.
  • Infuse parsley in gently warmed oil in a small saucepan over low heat until aromatic, approximately 5 minutes.
  • Drizzle asparagus with oil, generously sprinkle Parmesan cheese over top using a grater or shave into strips with a peeler, and season with pepper.
