Sparkling Berry Gelatin Cups

Create modern, refreshing fruit gelatin dessert in minutes to chill.
Ingredients:
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh blackberries
  • 1 envelope unflavored gelatin
  • 3 tablespoons granulated sugar
  • 1/4 cup boiling water
  • 3/4 cup chilled ginger ale
  • 1/2 cup whipping cream
  • 1 tablespoon granulated or powdered sugar
  • 1/2 teaspoon vanilla, if desired
  • 4 sprigs fresh mint
Instructions:
  • Prepare 4 (1/2-cup) custard cups or ramekins by spraying them with cooking spray and placing them on a cookie sheet. In a small bowl, gently toss the berries, then distribute the mixture evenly among the cups.
  • In a medium bowl, whisk together gelatin and 3 tablespoons of sugar until well combined. Pour in boiling water and continue to whisk until gelatin is fully dissolved. Mix in ginger ale until smooth. Carefully pour the mixture over the berries in each cup until full. Refrigerate for 2 hours or until firm.
  • In a chilled medium bowl, whip together whipping cream, 1 tablespoon sugar, and vanilla using an electric mixer on low speed until mixture starts to thicken. Increase speed to high gradually and whip until soft peaks form.
  • Unmold each gelatin cup onto a dessert plate, generously top with a 1/4 cup of whipped cream, and elegantly garnish with fresh mint leaves.
