Spiced windmill cookies, known as speculaas, are a delightful treat with cinnamon and clove flavors.
Ingredients:
  • 3 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 0.125 teaspoon baking powder
  • 0.125 teaspoon salt
  • 1 cup butter, softened
  • 1.25 cups packed brown sugar
  • 0.5 cup sliced almonds
Instructions:
  • Combine flour with a flavorful blend of spices, baking powder, and salt in a medium-sized bowl.
  • In a large bowl, whisk together butter and sugar until creamy and airy. Add egg and mix thoroughly.
  • Mix half of the flour mixture into the batter by hand. Then add the rest of the flour and almonds, and combine using a wooden spoon or knead by hand.
  • Separate the dough into four portions, wrap each in plastic, and refrigerate for several hours or overnight. (Chill the mold if using.)
  • Preheat your oven to 350°F (180°C) and generously grease two cookie sheets.
  • Take out a quarter of the chilled dough and flatten it by hand. Grease the mold and dust it lightly with flour. Firmly press the dough into the mold using your fingers. Use a knife to trim off any extra dough from the edges of the mold.
  • Place cookies onto prepared greased cookie sheets using a spatula, ensuring they are spaced approximately one inch apart.
  • Chill the dough scraps for re-rolling later and lightly dust with flour, avoiding re-greasing the cookie mold.
  • Continue shaping the rest of the dough into cookies. Once the cookie sheets are full, bake the cookies for 20-25 minutes or until they turn golden brown on the edges. Store the cookies in a covered tin.
