Whip up a quick chorizo and sun-dried tomato penne dish topped with fresh rocket and shaved parmesan for a flavorful dinner in no time.
Ingredients:
  • 300g penne
  • 2 chorizo sausages, thinly sliced diagonally
  • 30g sun-dried tomato
  • 300ml light thickened cream
  • 120g pkt Baby Rocket
Instructions:
  • Boil pasta in a large pot of salted water as per package instructions until al dente. Save 1/2 cup (125ml) of pasta cooking water.
  • Heat a large deep frying pan over medium-high heat. Cook chorizo until golden brown, transfer to a plate. Remove excess oil from pan, then return chorizo to the pan with garlic. Cook until aromatic.
  • Combine the sun-dried tomato, cream, and reserved cooking liquid in a pot and bring it to a boil. Stir constantly and cook for 2-3 mins until the sauce slightly thickens. Season to taste and then remove from heat.
  • Combine the pasta and half of the rocket with the chorizo mixture, tossing to combine. Serve the mixture in individual bowls and top with the remaining rocket before serving.
