Easy and flavorful chorizo and bean soup - hearty and delicious in no time!
Ingredients:
  • 2 chorizo sausages
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely diced
  • 2 garlic cloves, crushed
  • 5.00 gm paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 litre chicken style liquid stock
  • 2 x 420g cans cannellini beans, drained, rinsed
  • 2 large kale leaves, stem and centre vein removed, roughly torn
Instructions:
  • Slice half of a chorizo thinly, then roughly chop the rest. Heat oil in a large saucepan over high heat. Cook both the sliced and chopped chorizo for 1 minute or until they start to brown, stirring occasionally. Transfer the sliced chorizo to a plate lined with paper towel to keep warm.
  • Sauté onion and garlic with chorizo in pan until onion is soft. Mix in paprika, garlic powder, and onion powder. Pour in stock, water, and beans. Bring to a boil, then simmer for 5 minutes. Add kale and simmer for 2 minutes until just wilted. Garnish with reserved sliced chorizo and serve.
