Whip up a quick and flavorful Thai chicken rissoles with mango salad in just 10 minutes!
Ingredients:
  • 500g chicken mince
  • 20.00 gm Thai Seasoning
  • 18.40 gm grapeseed oil
  • 1/3 bunch fresh mint
  • 250g pkt zucchini noodles
  • 80g mixed salad leaves
  • 1 large mango
  • 80g (1/2 cup) sweet chilli- flavoured cashews
  • 1 lime
  • Kewpie Mayonnaise Sriracha Flavour, to serve
Instructions:
  • Preheat a big non-stick frying pan on medium-high heat.
  • Combine chicken and Thai seasoning in a bowl, then mix thoroughly using your hands until fully incorporated.
  • Heat the pan until sizzling, then drizzle in oil. Shape mixture into 8 small patties using wet hands. Cook for 2 minutes, flip, cover, and cook for an additional 3 minutes until fully cooked.
  • Gather fresh mint sprigs and place them on a serving platter along with zucchini, salad leaves, and thinly sliced mango. Sprinkle with cashews and add lime wedges for a burst of flavor.
  • Plate the rissoles elegantly and pair them with creamy mayonnaise and zesty lime wedges to delight your taste buds.
