Delicious roasted chicken with aromatic spice rub and sweet maple-mustard glaze.
Ingredients:
  • 2 (3 pound) whole chickens, quartered
  • 1 tablespoon brown sugar
  • 1 tablespoon sea salt
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dry mustard
  • 0.5 teaspoon celery seed
  • 0.25 teaspoon cayenne pepper
  • 0.25 cup maple syrup
  • 1 tablespoon yellow mustard
  • 1.5 teaspoons spicy brown mustard
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground black pepper
Instructions:
  • Remove any excess skin from the chicken pieces. Combine brown sugar, sea salt, garlic powder, onion powder, paprika, oregano, dry mustard, celery seed, and cayenne pepper in a bowl. Massage the spice mixture onto all chicken pieces, ensuring to get it under the skin of the breast pieces. Cover with plastic wrap and refrigerate for approximately 1 hour.
  • Combine maple syrup, yellow mustard, brown mustard, garlic powder, onion powder, paprika, and black pepper in a bowl and whisk until well mixed.
  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil.
  • Arrange the chicken pieces on the prepared pan with the skin side up, positioning breast pieces in the center and leg quarters near the edges.
  • Roast the chicken in the preheated oven for 15 minutes, then baste with maple glaze. Rotate the pan, roast for another 15 minutes, baste with maple glaze, and continue roasting until chicken is fully cooked and juices run clear, about 10 more minutes. Use a thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C), and baste occasionally if needed.
