Spiced beef grilled to perfection, served with savory herb mayo.
Ingredients:
  • 3kg beef sirloin roast
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 2.50 gm sweet paprika
  • 163.35 gm whole egg mayonnaise
  • 40.00 ml parsley, finely chopped
  • 20.00 ml fresh thyme leaves, finely chopped
Instructions:
  • Preheat your barbecue with the lid on to 180C. If you have 3 burners, ignite the two outer ones and keep the center one off; if you have 2 burners, light only one side.
  • Coat meat with olive oil and season generously with spices, salt, and pepper. Sear meat on a hot grill until browned. Transfer meat to a foil baking dish. Cover with foil, place on the grill, close the lid, and cook for 1 hour and 15 minutes for a perfect medium-rare finish.
  • Take the meat off the barbecue, cover it loosely with foil, and let it rest for at least 20 minutes (serve at room temperature). Remove the string from the beef and slice it thickly for serving.
  • Prepare the flavorful Herb Mayo by mixing fresh herbs with creamy mayonnaise in a bowl. Chill until ready to serve alongside beef and your favorite side dishes.
