Spice-rubbed roast chicken

Succulent roast chicken, delicious hot or cold - ideal for picnics!
Ingredients:
  • 2kg whole chicken
  • 27.30 gm olive oil
  • 4 garlic cloves, crushed
  • 10.00 gm ground cumin
  • 5.00 gm paprika
  • 2.50 gm ground cinnamon
  • 1 tsp turmeric
  • 1/2 tsp dried chilli flakes
  • Fresh continental parsley leaves, to serve
  • Salt, to season
Instructions:
  • Rinse the chicken thoroughly, pat dry, and place breast-side down on a clean work surface. Use poultry shears to cut down both sides of the backbone, discard it, and lay the chicken flat. Flip it breast-side up, flatten it, tuck the wings under, then transfer to a glass or ceramic baking dish.
  • In a bowl, mix together the oil, garlic, cumin, paprika, cinnamon, turmeric, and chili flakes. Season with salt and pepper. Rub the flavorful mixture over the chicken, then refrigerate for at least 1 hour, or ideally overnight, to marinate.
  • Preheat oven to 200°C. Place chicken in a roasting dish and roast for 1 1/4 hours, turning once, until juices run clear when pierced with a skewer in the thickest part. Let it rest for 10 minutes before serving.
  • Cut the chicken into pieces, then generously drizzle with the pan juices and sprinkle with fresh parsley.
