Elevate your evening with zesty almond-crusted fish paired with fresh Lebanese fattoush salad.
Ingredients:
  • 82.50 ml flaked almonds, finely chopped
  • 62.50 ml dukkah with almonds (see note)
  • 1 tsp finely grated lemon rind
  • 4 (150g each) salmon fillets, skin removed, cut into 5cm pieces
  • vegetable oil, for shallow-frying
  • 1 large Lebanese bread round
  • 2 medium tomatoes, roughly chopped
  • 1 Lebanese cucumber, chopped
  • 1/2 small red onion, halved, thinly sliced
  • 250.00 ml fresh flat-leaf parsley leaves
  • 36.40 gm olive oil
Instructions:
  • On a plate, mix almonds, dukkah, and lemon rind. Coat the fish with the mixture. Heat oil in a large frying pan over medium heat. Cook fish for 2 to 3 minutes for medium doneness, or longer based on your preference.
  • While waiting, prepare the fattoush by grilling the bread until golden and crispy. Break it into bite-sized pieces. In a bowl, mix together tomato, cucumber, onion, parsley, olive oil, lemon juice, and the grilled bread. Toss well to combine.
  • Present the fish alongside a vibrant fattoush salad for a delightful meal.
