Spiced apple vodka cooler recipe

Vodka, apple, raspberries, and mint combine in this delightful and refreshing cocktail to raise a toast with!
Ingredients:
  • 1 vanilla bean, split
  • 1 litre clear apple juice
  • 6 cinnamon sticks
  • 4 whole cloves
  • 500.00 ml vodka, chilled
  • 131.25 gm lemon juice
  • 1 small pink lady apple, thinly sliced into rounds
  • 1 small granny smith apple, thinly sliced into rounds
  • 125g raspberries, torn
  • 82.50 ml small fresh mint leaves
  • 500.00 ml ice cubes, to serve
Instructions:
  • Extract vanilla bean seeds by scraping. Combine half of the apple juice in a small saucepan over medium heat with vanilla bean, seeds, cinnamon, and cloves. Simmer for 2 minutes. Remove from heat and let cool for 30 minutes. Transfer to a large jug or bowl. Mix in the rest of the apple juice. Chill in the refrigerator for 1 hour before serving.
  • Remove and discard the aromatics.
  • Combine the apple juice mixture, vodka, lemon juice, apple slices, raspberries, mint, and ice cubes in a large serving jug. Gently stir to mix well. Pour into glasses and enjoy.
