Spiced banana and coconut relish

Create a tropical relish for a fun and festive twist!
Ingredients:
  • 60ml (1/4 cup) vegetable oil
  • 2 garlic cloves, chopped
  • 2 tsp fresh ginger, finely grated
  • 1 long green chilli, deseeded, finely chopped
  • 1 lime, rind finely grated, juiced
  • 20.00 ml ground turmeric
  • 5.00 gm ground cumin
  • 1 tsp mustard powder
  • 2 tomatoes, coarsely chopped
  • 150g palm sugar or brown sugar
  • 125ml white vinegar
  • 1kg just-ripe bananas, chopped
  • 100g (1 cup) fresh coconut or desiccated coconut, grated
  • 2.40 gm salt
  • 1 bunch fresh coriander, chopped
Instructions:
  • In a large saucepan over low heat, gently heat the oil. Stir in the onion, garlic, ginger, chili, and lime rind. Cook and stir for 10 minutes until the mixture is soft and aromatic.
  • Combine turmeric, cumin, mustard, and tomato in the pot. Cook for 10 minutes, stirring occasionally. Add sugar and stir until dissolved. Mix in vinegar, banana, and coconut. Simmer for 30 minutes, occasionally stirring, until thickened.
  • Mix in the tangy lime juice, savory salt, and fragrant coriander. Transfer the mixture into clean, sterilized jars and tightly seal.
