Spiced BBQ lamb ribs recipe

Irresistible BBQ spiced lamb ribs.
Ingredients:
  • 20.00 ml coriander seeds
  • 2 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 10.00 gm smoked paprika
  • 1/2 tsp cayenne pepper
  • 1.8kg Lamb Slow Cook Ribs
  • 36.40 gm olive oil
  • 280g yoghurt
  • 60ml olive oil
  • 1 long red chilli, seeded, finely chopped
  • 20.00 ml finely chopped flat-leaf parsley
  • 2 tsp finely chopped tarragon
  • 1 tsp finely chopped rosemary
  • 1 lemon, rind finely grated, juiced
Instructions:
  • Preheat oven to 160°C (140°C fan-forced). Grind coriander seeds, fennel seeds, and cumin seeds into a fine powder using a spice grinder or mortar and pestle. Combine with paprika, cayenne pepper, and 1 tablespoon of salt in a small bowl, mix well.
  • Remove the lamb ribs from the packaging and gently dry them with paper towels. Coat the ribs with oil followed by the spice mixture, ensuring even coverage on both sides. Transfer the seasoned lamb to a sturdy baking tray, then tightly cover with foil. Bake in the oven for 2½ hours until tender. Let it rest on a wire rack, covered, for 30 minutes before serving.
  • In a small bowl, mix together yogurt, oil, chili, parsley, tarragon, and rosemary with ½ tsp lemon zest and 1 tbsp lemon juice until smooth. Season with salt and pepper to taste.
  • Preheat the barbecue to medium-high heat. Take the lamb out of the pan, getting rid of any extra fat and juices. Grill the lamb for 2 minutes on each side until caramelized. Place it on a big serving platter and enjoy with the yogurt sauce.
