Wow your guests with these luxurious brandy snap rolls filled with creamy goodness.
Ingredients:
  • 50g butter, chopped
  • 70g brown sugar
  • 60ml honey
  • 50g plain flour
  • 2.50 gm ground ginger
  • 1.25 gm mixed spice
  • 300ml thickened cream
  • 20.00 ml brandy
  • 1.25 gm ground cinnamon
Instructions:
  • Preheat your oven to 180°C and prepare your oven tray by lining it with baking paper.
  • In a saucepan, melt the butter with brown sugar and honey over medium heat while stirring, for 2-3 minutes until the butter is melted and sugar is dissolved. Take it off the heat and let it cool slightly for 5 minutes before using.
  • Mix together the flour, ginger, and mixed spice until well combined. Spoon 4 teaspoons of the mixture onto a baking tray, making sure to space them apart. Bake for 5 minutes or until the biscuits are bubbling and have spread to 10cm in diameter. Remove from the oven and let them cool for 1 minute. Quickly use a palette knife to wrap each biscuit around the handle of a wooden spoon. Allow them to set for 1 minute, then gently slide them off the spoon onto a wire rack. Repeat for the remaining mixture in 5 batches.
  • Whip cream, icing sugar, brandy, and cinnamon with an electric mixer until soft peaks form. Transfer the cream to a piping bag with a 1cm fluted nozzle. Pipe the cream into each brandy snap. Serve promptly.
