Roasted acorn squash halves drizzled with a spiced orange-brandy glaze - perfect for cold winter nights.
Ingredients:
  • 3 tablespoons butter, divided
  • 3 tablespoons brown sugar
  • 3 tablespoons frozen orange juice concentrate, thawed
  • 3 tablespoons brandy
  • 2 acorn squash, halved and seeded
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Melt 1 tablespoon of butter in a 9x13 inch baking dish and ensure the pan is coated evenly with the melted butter.
  • Combine the remaining butter, brown sugar, frozen orange juice concentrate, and brandy in a saucepan. Boil the mixture and then remove from heat.
  • In a baking dish, arrange the squash halves cut side down and bake for 30 minutes or until tender. Flip the squash over, drizzle with sauce, and bake for an additional 15 minutes. Let it cool slightly before serving.
