Spiced carrot syrup cake

Spiced-up carrot cake with aromatic spices and sweet orange syrup.
Ingredients:
  • 90g (1/2 cup) sultanas
  • 84.00 gm orange juice
  • 150g (1 cup) self-raising flour, sifted
  • 100g (1 cup) almond meal
  • 140g (2/3 cup, firmly packed) brown sugar
  • 5.00 gm ground cinnamon
  • 2.50 gm ground nutmeg
  • 1/2 tsp ground cloves
  • 150g unsalted butter, melted, cooled
  • 2 eggs, lightly whisked
  • 2 (about 330g) carrots, peeled, coarsely grated
  • 2 tsp finely grated orange rind
  • Double cream, to serve
  • 60ml (1/4 cup) honey
  • 2 tsp orange zest
Instructions:
  • Preheat your oven to 180C. Grease and line a 22cm round springform cake pan with parchment paper.
  • In a bowl, mix together the sultanas and orange juice, allowing the flavors to meld together.
  • In a large bowl, mix together flour, almond meal, sugar, cinnamon, nutmeg, and cloves. Create a well in the center and add butter, egg, carrot, orange rind, and sultana mixture. Stir until well combined. Pour the batter into the prepared pan, smooth the surface, and bake for 50 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes.
  • To create the luscious orange syrup, combine honey and orange juice in a small saucepan over medium heat. Cook, stirring, until the honey melts, then bring to a boil. Simmer until thickened for about 3 minutes. Add the orange rind, then drizzle the mixture over the cake. Let it cool for 30 minutes before serving with cream.
