Spiced chicken, sweet potato and rice fritters

Delicious sweet potato fritters with chicken and brown rice - perfect for any meal!
Ingredients:
  • 400g orange sweet potato, peeled, coarsely grated
  • 125.00 ml plain flour
  • 3 tsp Moroccan seasoning
  • 2 eggs
  • 85.80 gm buttermilk
  • 82.50 ml chopped fresh chives
  • 200.00 gm cooked brown rice
  • 500.00 ml shredded cooked chicken
  • Olive oil spray
  • 200g reduced-fat plain Greek-style yoghurt
  • 52.50 gm lemon juice
  • 1/2 tsp lemon zest
  • 80g baby salad leaves
  • 1 large red apple, cored, cut into matchsticks
  • 62.50 ml flaked almonds, toasted
  • 62.50 ml fresh flat-leaf parsley leaves
Instructions:
  • Preheat the oven to 230C/210C fan-forced and line 2 large baking trays with baking paper.
  • In a large bowl, mix together potato, flour, seasoning, egg, buttermilk, 1/4 cup chives, rice, and chicken. Season generously with salt and pepper.
  • Spoon 1/3 cup of mixture onto prepared trays, spacing them 6cm apart to yield 12 fritters. Gently flatten each to form 9cm rounds using the back of a spoon. Spray with oil and bake for 25 to 30 minutes until golden and firm. Let them stand for 5 minutes before serving.
  • In a bowl, mix together yogurt, garlic, 1 tablespoon of juice, salt, and pepper. Top with a sprinkle of lemon zest for added freshness.
  • In a bowl, mix together salad leaves, apple, almonds, parsley, and chives. Drizzle with the remaining lemon juice, toss well to coat, and season with salt and pepper. Serve the fritters with the yogurt mixture and salad.
