Spiced roast chicken and veggies elevate a classic dish with irresistible flavor.
Ingredients:
  • 80g butter, softened
  • 1 tsp ground turmeric
  • 2 garlic cloves, crushed
  • 2 tsp ground coriander
  • 1 tsp ground cumin seeds
  • 4 large chicken Marylands
  • 750g sebago potatoes, scrubbed, cut into thick wedges
  • 750g orange sweet potato, peeled, cut into thick wedges
  • 36.40 gm olive oil
  • 20.00 ml mint leaves, chopped
  • steamed green beans, to serve
Instructions:
  • Preheat your oven to 230°C. Prepare a large roasting pan with baking paper. Mix butter, turmeric, garlic, 1 teaspoon coriander, and 1/2 teaspoon cumin in a bowl. Season with salt and pepper to taste.
  • Gently separate chicken skin from flesh and generously spread spiced butter underneath. Place chicken on a plate, cover, and refrigerate for 30 minutes to allow flavors to meld.
  • Mix potato, sweet potato, oil, and remaining coriander and cumin in the lined pan. Season with salt and pepper, ensuring vegetables are well coated. Roast at 220°C for 20 minutes. Next, place chicken on top of the vegetables and continue roasting at 200°C for 35 to 40 minutes until chicken is cooked through and golden. Serve sprinkled with mint.
  • Plate the chicken with a side of roasted vegetables and steamed beans.
