Elevate takeout with this easy homemade recipe.
Ingredients:
  • 12 small chicken legs
  • 130.00 gm buttermilk
  • 375.00 ml dried packaged breadcrumbs
  • 20.00 gm cajun seasoning
  • 2.50 gm paprika
  • 4 sebago potatoes, peeled, cut into thick wedges
  • Olive oil spray
  • Lemon wedges, to serve
Instructions:
  • Transfer the chicken to a spacious bowl and generously coat it with the buttermilk.
  • Marinate in the fridge for 30 minutes, flipping once. Preheat oven to 220C and line 2 large baking trays with non-stick baking paper.
  • Combine breadcrumbs, cajun seasoning, and paprika in a large resealable plastic bag.
  • Coat 2 chicken legs thoroughly. Arrange in a single layer with some space between on a prepared tray. Repeat for the rest of the chicken and breadcrumbs.
  • Coat lightly with oil spray.
  • Arrange the potato slices in a single layer on the second tray.
  • 1. Grease with oil. Season generously with salt and pepper. Roast the chicken and potatoes in the oven for 30-35 minutes, swapping shelves halfway, until beautifully golden and cooked through.
  • Garnish with fresh lemon wedges before serving.
