Savor this quick and tasty cumin and paprika spiced chicken and tomato dish - a delightful 20-minute dinner.
Ingredients:
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 8 boneless skinless chicken thighs (1 1/2 lb)
  • 1 can (14.5 oz) fire-roasted diced tomatoes with garlic, undrained
Instructions:
  • Combine cumin, thyme, paprika, and salt in a small bowl, then massage the flavorful mixture onto the chicken.
  • Prepare a 12-inch skillet by spritzing it with cooking spray, then heat it over medium-high heat. Place the chicken in the skillet and cook for 2 minutes. Flip the chicken over and add the tomatoes. Bring it to a boil, then lower the heat. Cover and simmer for 10 minutes until the chicken's thickest part reaches 165F and the juices run clear. Uncover and cook for an additional minute or until the liquid is reduced by half.
