Affordable, nutritious and irresistibly tasty soup recipe.
Ingredients:
  • 1 x 400g pkt Fresh Veggie Mix
  • 20.00 ml finely grated fresh ginger
  • 1 garlic clove, crushed
  • 5.00 gm hot curry powder
  • 1L (4 cups) water
  • 2 x 400g cans chickpeas, rinsed, drained
  • 1 x 400g can diced tomatoes
  • 90g (1/3 cup) low-fat natural yoghurt
  • 82.50 ml small fresh mint leaves
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the vegetable mixture and sauté for 3 minutes, or until tender.
  • Mix in the ginger, garlic, curry powder, and cumin with the vegetables until well coated.
  • Place the water, chickpeas, and tomato in the pan and bring to a boil. Lower the heat to medium and simmer for 10 minutes. Season with salt and pepper to taste.
  • Serve the soup in individual bowls, and garnish with a dollop of yogurt and a sprinkle of fresh mint.
