Spiced coconut prawns

Asian-inspired grilled prawns, a surefire crowd-pleaser.
Ingredients:
  • 18 large green king prawns, peeled, deveined (tails intact)
  • 126.25 gm light coconut milk
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
  • 2 makrut lime leaves, finely shredded (see note)
  • 3 green onions, finely chopped
  • canola oil cooking spray
Instructions:
  • In a bowl, combine prawns, coconut milk, fish sauce, lime juice, makrut lime leaves, chili, and half of the onion. Mix well to coat everything evenly. Cover the bowl and refrigerate for 1 hour before proceeding.
  • Skewer prawns. Oil and heat the barbecue. Cook prawns, turning, for 3-4 minutes until cooked. Sprinkle with onion. Enjoy!
