Ingredients:
  • 1kg green king prawns
  • 36.40 gm peanut oil
  • 2 tsp brown mustard seeds (optional)
  • 2 tsp grated fresh ginger
  • 2 garlic cloves, crushed
  • 12 curry leaves
  • 1/2 tsp turmeric
  • 1/2 long green chilli, deseeded, finely chopped
  • 4 shallots, sliced
  • 42.00 gm fresh lemon juice
  • 60ml coconut cream
  • Steamed rice, to serve
  • Pappadums, to serve
Instructions:
  • Prepare the prawns by peeling them, ensuring the tails remain attached, and devein them. In a large frying pan over medium heat, heat the oil. Add mustard seeds and cook for about 30 seconds until they begin to pop. Introduce ginger, garlic, curry leaves, turmeric, chili, and half of the shallots. Stir and cook for 1 minute.
  • Pour in the zesty lemon juice and luscious coconut cream to the pan, then toss in the prawns. Stir and cook for 4-5 minutes until the prawns are perfectly cooked.
  • Incorporate the rest of the shallots. Enjoy with rice and pappadums.
