Ingredients:
  • 1kg medium green prawns, peeled with tails left intact, deveined
  • 60mls (1/4 cup) vegetable oil
  • 1 tsp brown mustard seeds
  • 4 green shallots, pale section only, shredded
  • 15 fresh curry leaves
  • 42.00 gm fresh lime juice
  • 1 tsp chilli powder
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 6 green shallots, finely chopped
  • 1 tsp grated fresh ginger
  • 2 garlic cloves, crushed
  • Salt & ground black pepper, to taste
Instructions:
  • Mix lime juice, chili powder, coriander, turmeric, green shallots, ginger, garlic, salt, and pepper in a large glass or ceramic bowl to create the marinade.
  • Mix the prawns and 1 tablespoon of oil with the marinade until well combined. Refrigerate for 1 to 6 hours for enhanced flavor development.
  • In a large frying pan over medium heat, heat half of the remaining oil. Add mustard seeds and cook until they begin to pop, about 30 seconds. Stir in shredded shallots and curry leaves, cook until shallots are golden, about 2 minutes. Remove mixture from the pan and set aside.
  • In a hot frying pan with the remaining oil, cook the prawns in 3 batches, stirring frequently, for 3-4 minutes until they curl, change color, and are just cooked through.
  • Add the prawns back to the pan with the mustard seed mixture and toss on medium heat for 1 minute. Serve right away.
