Delicious spiced prawns with lemon wedges and tzatziki make a stunning starter.
Ingredients:
  • 1 small brown onion, finely chopped
  • 40.00 ml coriander leaves, chopped
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 10.00 gm ground cumin
  • 7.50 gm paprika
  • 2 tsp ground turmeric
  • 36.40 gm olive oil
  • 1.5kg green prawns, peeled, deveined, tails left intact
  • Lemon wedges, to serve
  • Tzatziki, to serve
Instructions:
  • In a large bowl, mix together onion, coriander, parsley, garlic, cumin, paprika, and turmeric. Stir in the oil, then add the prawns and toss until well coated. Cover and refrigerate for 1 hour to let the flavors marinate.
  • Preheat a barbecue plate over medium-high heat. Place half of the prawns in a single layer on the barbecue and spoon over half of the marinade. Cook for 1 to 2 minutes on each side until prawns turn pink. Transfer to a bowl and repeat the process with the remaining prawns and marinade.
  • Plate the warm prawns with lemon wedges and tzatziki for a flavorful presentation.
