"Combine earthy spices and tangy lemon for a flavorful quick and easy prawn dish, perfect for appetizers."
Ingredients:
  • 80ml (1/3 cup) extra virgin olive oil
  • 37.50 gm ground cumin
  • 4.80 gm salt
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp cayenne pepper
  • 40.00 ml plain flour
  • 36 (about 1.25kg) medium green king prawns, deveined, tails intact
  • 185ml (3/4 cup) tahini (Mayver's brand)
  • 90ml cold water
  • 90ml fresh lemon juice
  • 40.00 ml chopped fresh coriander
  • 62.50 ml fresh coriander leaves, to garnish
  • Mixed salad leaves, to serve
Instructions:
  • In a large bowl, mix together 60ml (1/4 cup) olive oil, cumin, salt, garlic powder, cayenne pepper, and flour. Add prawns and toss gently to coat them evenly in the spice mixture. Let it marinate for 20 minutes.
  • In a medium bowl, smoothly blend together the tahini and water. Then, gently incorporate the lemon juice and chopped coriander until well combined.
  • In a hot non-stick frying pan with the remaining oil, sear one-third of the prawns for 1-2 minutes per side until they turn color and cook through. Transfer to a bowl, cover with foil to keep warm, and repeat with the remaining prawns in two more batches.
  • Place the spiced prawns on plates, drizzle with lemon tahini sauce, sprinkle with coriander, and serve alongside mixed salad leaves.
